World Pastry Chef 2017 Jean Thomas Schneider in a unique pastry training program that focuses on "Modern Entremets".

In this demonstration program you will be trained in techniques for the creation and composition of 7 different entremets, examining the factors and combinations of flavors, the articulation and perfection of French pastry techniques, the decoration and presentation of entremets, and the importance of proper texture.
